Seaweed Taste Evaluation

Changing Perception of Eating Seaweed

The commercial potential for using seaweed as a highly nutritious and healthy additive to food might present opportunities, however the caveat is that the public would need to find the food to be:

  • Tasty
  • Visually acceptable
  • Reasonably priced
  • Accepting of the health benefits.

To establish how the public might respond to these questions, we conducted taste trials in a local bakery with various breads that were baked with seaweed.  The results are as follows:

Taste of Erris

The taste test took place in An Builin Blasta, which is a café/bakery on Main Street Belmullet, County Mayo.

The analysis was in the category of;

  • A Taste Test.

From the above table 86% of all of the females were impressed by the product and 75% said they would like to try the product again.  89% of the females said that they liked the texture and 88% said they liked the colour of the product.  90% of the females were happy with the flavour; 75% of the females said that the flavour was not too strong, with 73% stating it was not too weak.  83% of the females were happy with the taste.

From the above table 88% of all of the males were impressed by the product and 52% said they would like to try the product again.  88% of the males said that they liked the texture of the product and 73% said they liked the colour of the product.  68% of the males were happy with the flavour; 55% of the males said that the flavour was not too strong, with 60% stating it was not too weak.  80% of the males were happy with the taste.

From the above table 60% of all of the Unknown Gender were impressed by the product and 74% said they would like to try the product again.  77% of the Unknown Gender said that they liked the texture of the product and 63% said they liked the colour of the product.  69% of the Unknown Gender were happy with the flavour; 71% of the Unknown Gender said that the flavour was not too strong, with 80% stating it was not too weak.  57% of the Unknown Gender were happy with the taste.

From the above table 83% of the entire total tested was impressed by the product and 70% said they would like to try the product again.  87% of the entire total tested said that they liked the texture of the product and 82% said they liked the colour of the product.  83% of the entire total tested was happy with the flavour; 70% of the entire total tested said that the flavour was not too strong, with 71% stating it was not too weak.  79% of the entire total tested was happy with the taste.
